4 cups cooked brown rice
1 can kidney beans, drained
1 cucumber, sliced
1-2 tomatoes, sliced
1 can artichoke hearts, drained and sliced
1/3 cup lemon juice
2 tablespoons olive oil
salt to taste
herbs to taste (basil, oregano, garlic, etc.)
Cook the brown rice according to instructions on the packaging.
Mix all ingredients well and chill before serving. Enjoy!
