2 cups water
1 cup washed cashews
1 1/2 teaspoons salt
4 oz. chopped pimiento
2 tablespoons nutritional yeast
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
3-4 tablespoons lemon juice
Blend all ingredients until smooth and creamy.
Pour mixture into a heavy saucepan and cook over medium heat 5-6 minutes, stirring constantly until thick.
Pour over haystacks, serve as a dip for corn chips, or as a cheese sauce for vegetables. Enjoy!
