Spinach Salad with Dressing

  • 3 tablespoons olive oil

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon honey

  • 1/4 sweet onion, chopped

  • 1 garlic clove, crushed

  • 1/2 teaspoon sea salt

  • A large bunch of spinach

  • 1 avocado, sliced

  • 1/3 cup pine nuts, walnuts or chopped almonds

  • Cherry tomatoes (optional)

  • Oil-cured olives (optional)

  • Red onion (optional)


Step 1

Mix together olive oil, apple cider vinegar, honey, onion, garlic, and sea salt. Let dressing marinate for at least 2 hours. 

Step 2

Chop the spinach and serve on plates with avocado, nuts and optional toppings. Drizzle with dressing. Enjoy!
